Are you convinced potatoes make you fat?
I know, I thought that too. And why not, right? Since the arrival of the low-carb Atkins revolution, it's been shouted from the rooftops that a white potato is the best way to say goodbye to your summer swimsuit forever. In fact, I used to avoid anything potato-related out of complete certainty that if one white, starchy piece passed my lips I'd immediately blow up a la the Pillsbury Dough Boy. True story.
And then a few years ago, it dawned on me. I tell people to eat real, whole food and that's exactly what a potato is. Potatoes are literally dug up from the earth and sold as is. No processing or chemical extraction needed. And as it turns out, potatoes have twice the amount of potassium per serving than our beloved bananas and are a great source of vitamins B6 and C. Who knew??
The potato slander you are so familiar with is due to its high rating on the glycemic index, a tool used to measure the increase in blood sugar caused by particular foods. If you look at a glycemic index chart you will be shocked to see that a danish and M&M's have lower glycemic index ratings than a unprocessed, sugar-free potato. Why? Because a danish and M&M's both come with FAT, which helps mitigate the sugar spike. Now, the moral of the story is not to run out and devour M&M's because they are now deemed a "health" food, but rather to always eat your potatoes with high-quality fat (organic butter, extra virgin olive or coconut oil) and fiber (vegetables) to chill out your sugar levels.

Listen, I know you are worried about potatoes or at least feel guilty when you eat them. I get it so let me just say this. I eat potatoes all the frickin' time and have yet to see anything roly-poly appear on my arms or thighs. And believe me, for the first few months of adding them into my diet I was waiting for the other shoe to drop. Three years later I'm still waiting.
