Shaved fennel & carrot salad

Fennel plus carrots? Yes, please!

So simple. Incredibly easy, tasty and comes together in like, say, 5 minutes. You can add grated apple, feta, parsley, even currants or capers if you feel so inclined. The possibilities are endless with this combo or you can just go straight up like I did.

Fennel and Carrot Salad

2 large fennel blubs

6 large carrots, peeled and grated

extra-virgin olive oil

freshly squeezed lemon juice

few pinches of ground coriander

salt and pepper to taste

Preparation:

Cut the stalks off of the fennel bulbs. Cut the fennel blubs in half, then half again and cut out the tough cores. Thinly slice the fennel bulbs lengthwise.

Peel and grate the carrots.  You can do this by hand or use a food processor.

Toss the fennel and carrots together in a large bowl.

Drizzle with a good glug of olive oil, a few hearty squeezes of fresh lemon juice, a  dash of coriander, sea salt and pepper.  Toss, taste and adjust as needed.  See, so simple!  Enjoy.
